If you want to have a savoury roast on the table for dinner than this recipe is the one for you. It is super straight forward!
Just pick a quality cut, use Cole's Sunday Rub, and you are well on your way to solving dinner!
INGREDIENTS
Roast
2 to 3 tbsp Sunday Rub
2 tbsp oil
2 tbsp butter, separated
1 Onion
3 Potatoes
3 Carrots
2 tbsp Veggie Cure
Salt to taste
METHOD
Rub roast with Sunday rub and allow to rest and come to room temp before searing
Heat oil and butter in a cast iron dutch oven
Add roast and sear on all sides, remove
Add 1 tbsp clarified butter
Add vegetables, cook for 2 to 3 minutes
Replace roast and place roast at 375 degrees for 20 minutes/pound
Allow to rest for 20 minutes, covered loosely with foil, before carving
