This cake is so quick, so easy, and so good. You can really make it your own by adding a flavour profile of your own. This time I added some pumpkin puree and pumpkin spice. Feel free to add more pumpkin spice to intensify the flavour, the recipe gives off a very mild and muted flavour that would pair well with a decadent topping or ice cream!
INGREDIENTS
1 cup flour
1 tsp baking powder
¼ tsp baking soda
1 tsp pumpkin spice, optional
½ cup clarified butter
½ cup sugar
½ cup milk
1 tsp vanilla
1 egg
METHOD
Bake at 350 degrees
Mix flour, baking powder, soda, and pumpkin spice mix well
In another bowl, combine the butter and sugar, well
Add milk and vanilla to the sugar/butter mix until creamy
Add egg, combine
Add the flour mixture to wet ingredients, until batter forms
Grease loaf pan, pour in contents
Bake on middle rack, for 25 to 30 minutes, until toothpick inserted and comes out clean
Wait 10 minutes before inverting, and allowing to cool completely
