Pumpkin Pancakes

These are AMAZING!!! Incorporating the flavours of fall, this recipe comes together really easily and delivers in flavour. 

 

INGREDIENTS



1 cup whole wheat flour

1 tbsp baking powder

1 tsp pumpkin spice

¼ tsp salt

1 cup milk, of your choice

1/3 cup pumpkin puree

1 egg

1 tbsp maple syrup

½ tsp vanilla

1 tbsp clarified butter

½ cup seeds or nuts (optional)

 

 

 

 

METHOD



Combine all dry ingredients, make a well

In a separate bowl, combine all wet ingredients

Pour wet mixture into the well of dry mixture and mix until combined

Stir in seed and/or nuts, if using

 

In a heated skillet, pour ¼ cup portions

Flip when bubbles appear

 

Serve with crushed walnuts/pecans and maple syrup
