Why have just regular old mashed potatoes - Okay, I know they are amazing, but.....Let's try something new, and using seasonal produce!
Prepare the potatoes just as you normally would, however introduce some of Cole's pumpkin puree to really seal the deal with the holiday remix.
INGREDIENTS
4 large potatoes
Water
1 shallot*
2 garlic*
½ cup pumpkin puree
½ tsp pumpkin spice
1/3 cup heavy cream
1 ½ tbsp clarified butter
METHOD
Bring cut potatoes to a boil in pot filled with water, until fork tender
Drain, place in large mixing bowl or processor
Add remaining ingredients, adjust butter and cream to taste
Blend until smooth
Salt & pepper to taste
*Toast shallots and garlic in oil in a skillet beforehand for added flavour
